Since I’m in Stabilization, this is one of the last meals I made before I really decided to start eating a lot more healthy carbs again. It’s important that you start eating them, but more importantly, the right ones. I’ll explain a lot more in tomorrows post.
VEGETABLE TURKEY BURGERS WITH RAINBOW CHARD
1/4 cup artichoke hearts, chopped
2 T sweet onion, finely chopped
2 T carrots, finely chopped
2 T zucchini, finely chopped
2 button mushrooms, finely chopped
1/2 lb ground turkey
3 T oat bran
1 bunch Swiss chard, tough stems removed, and chopped
Saute the first 5 ingredients in a small pan in a bit of cooking spray for 5 minutes. Season with salt and pepper. Set aside and let cool for a few minutes. Meanwhile, start sauteing your Swiss chard in a large pan with a few tablespoons of water. Saute for about 10 minutes. Season with salt and pepper. Mix the vegetables into the turkey meat with your hands, adding the egg and the oat bran. Season. Form two patties and fry in the small pan until fully cooked through, about 5 minutes per side. Serve patties over chard.
