Since I bought 4 chicken breasts last night I had to something different with the other two. I like splitting them up because 1. I love to cook so now I have something else to make tonight, and 2. I love coming up with new Dukan Diet recipes that aren’t leftovers from last night! I read a lot of recipes online about stuffing breasts and this was my choice. I don’t care for thick pieces of dry white chicken (I know, everyone tells me it’s not dry!!) so I decided to pound the chicken and roll it up so the chicken was more tender and even thickness. Boy, I can’t wait to get into those chicken thighs I bought last night too! But that’s tomorrow night!
Remember, you’re only eating a quarter of the recipe so 1 T of real bacon is not that bad! Especially if you use chicken breasts and fat free cream cheese. I used huge chicken breasts and I removed the tender that was attached-see tomorrow for what I did with them! Then I slit the breast in half, not completely through, and opened it up. Then I pounded the breasts to about a half inch thick. Then I stuffed and baked. Delish. We loved them!!
STUFFED CHICKEN BREASTS
4 chicken breasts
4 oz low or fat free cream cheese
1/2 sweet onion, chopped
2 T fresh parsley, chopped
4 T Real Crumbled Bacon
2 T jalapeno, chopped
1/2 t salt
1/2 t pepper
Look above to see how I prepared the chicken. I split it and pounded it so I could stuff it. Then I mixed all the ingredients together and placed 1/4 of the mixture down the middle of the larger half and folded over the other half and used a couple toothpicks to hold it all together.
I sprayed a bit of cooking spray on top of each and seasoned with salt and pepper. Baked at 375 for 25 minutes. Delish!! Tomorrow, see what I did with the leftover chicken tenders I removed from these huge breasts.
