Old Dukan Diet recipe but I’m updating all my missing photos and saw this one again. Oh my, I know what I’m having for dinner tonight!!
I stopped at the Carniceria in my neighborhood tonight. They had this thinly sliced lean steak that looked delicious. I was actually craving a steak on my walk home and thought this would be delicious with some really spicy salsa and sweet onions. I love tomatillo salsa but thought kicking it up a bit and adding some fiery ground chilis and some color to it sounded like fun to experiment with. The cut of meat in the market was called “Ranchera” so here is what I made of it…skip the salsa and the veggies and you can have leftovers for your PP day!
1 lb thinly sliced sirloin steak
1/2 onion, sliced
1/2 red bell pepper
1/2 bunch cilantro
Grill or place in a very hot grill pan, the onions, bell peppers and steak until done. Mine only took about 3 minutes per side, they were sliced very thinly. Add the cilantro at the end and just wilt the leaves. Serve steak with vegetables, wilted cilantro and ranchera salsa.
12 small tomatillos, washed, husked and cut in half
2 T tomato paste
1/3 cup cilantro, chopped
2 cloves of garlic, finely chopped
1/2 small onion, finely chopped
1 jalapeno, seeded and finely chopped
1/2 cup water
1 drop, liquid smoke (optional)
1/4 t cayenne pepper
1/4 t ancho chili powder
1/4 t chili powder
1 T paprika
salt and pepper
Roast tomatillos and garlic in a skillet flipping once, until they are soft, about 15 minutes. Put the tomatillos, tomato paste, garlic, cilantro, water and liquid smoke in a food processor and process til smooth. Add seasonings and season with salt and pepper. Add the onion to the salsa at the end.
