This was one simple dish that was ABSOLUTELY fabulous. I think I could eat this every day. Remember, if you’re in the early phases of the diet you can’t have the nuts but I highly recommend this dish for later in the diet or just put nuts on the rest of the family’s until you can have some!
SPINACH AND KALE SIDEDISH
1 large bag of chopped kale, cleaned and dried
1/2 bag of baby spinach, cleaned and dried
1/2 jalapeno, sliced super thin
3 T toasted pine nuts
1 t Parmesan cheese, grated
1 T fresh lemon juice
Saute the kale in a large pan in a bit of water for 10 minutes (mine had some pretty tough ribs still attached). Add the spinach and jalapeno and saute another 5 minutes, adding a few tablespoons of water if necessary. Season with salt and pepper. While the kale is cooking, toss the pine nuts into a dry non-stick pan and warm over medium heat until the oils begin to release from the nuts, about 5-8 minutes, shaking the pan frequently so they don’t burn. Remove from heat and cool completely.
Once greens are wilted, remove from heat, stir in the Parmesan and lemon juice. Serve on plates, garnishing with a bit more Parmesan and the toasted pine nuts.
