Mmmmmmm. I made this last night. Super satisfying and quick to make. A Dukan Diet recipe that won’t disappoint.
SPAGHETTI SQUASH CASSEROLE
1 medium spaghetti squash, halved and seeded
1/2-2/3 jar prepared marinara sauce, careful to lookout for added sugar
1/2 lb ground turkey or turkey sausage, browned with 1/2 small chopped onion
3/4 cup cottage cheese
1 cup fat free mozzarella cheese, shredded
2 T Parmesan cheese, grated
Microwave the squash, cut side down, on a plate with a few tablespoons of water for about 20 minutes or until tender. Let cool a bit and remove with a spoon. Mix the turkey and sauce together. Layer half the squash, then 1/2 the cottage cheese, mozzarella and sauce, in a square baking pan. Repeat and top with Parmesan. Bake at 375 for 35 minutes or until bubbly. Let set for 10 minutes before serving.
