So, I was craving spaghetti and meat sauce the other night and this is what I came up with. A Dukan Diet recipe that fits the bill. I wasn’t sure the cabbage was going to satisfy the craving but Tom and I actually thought it was better! Well, in a sense that it was lighter, there was no full bloated feeling after and we kept to the diet which is a serious focus for me right now. I am so dedicated to losing the weight I gained back. I really don’t want to be in this boat again. Maintenance…no problem, but this is it. I’m not working this hard and having to come back and do it all over again. So…on to my spaghetti bolognese recipe…Enjoy!
1 head of cabbage, thinly sliced
1 8 oz package sliced mushrooms, chopped
1 small sweet onion, chopped
1 lb ground turkey
1 jar spaghetti marinara (low, low sugar) or 1 28 oz can crushed tomatoes, with your own added spices (dried parsley, basil, oregano, salt and red pepper flakes)
In a large soup pot boil water seasoned with salt. Add the cabbage and bring to a boil. Turn down and cook while you prepare your sauce.
In a medium saucepan add the onion and mushroom and a half teaspoon of salt. This will bring the liquid out of the mushrooms and you will not need to add any fat. Cook the vegetables for 5 minutes on medium-high head. Add the ground turkey at the same time you add your tomatoes. Cook the meat in the sauce, stirring constantly, for 5 minutes.
Turn down the heat and simmer for 15 minutes, stirring occasionally.
Meanwhile, drain the cabbage after it’s soft, about 15 minutes simmering. Let it sit in the colander while you cook your sauce. The drier the cabbage the better. I let mine sit for about 10 minutes.
Voila, you have spaghetti with meat sauce in about 30 minutes, carb-free and delicious!
