My dear friend Martin came over last weekend and he deserved the best meal I could make while staying within my Dukan Diet rules. He, sadly, has stomach cancer and I know he’s going to beat it. So, this salad was specially made for him. We love you Martin!!
Start out with the most fabulous seafood you can find.
1/4 lb Lobster…
1/2 lb large shrimp…
and 1/4 lb of Dungeness Crab.
Then prepare your dressing: Macerate (or soak) one large shallot in 2 tablespoons of white wine vinegar and 2 teaspoons of lemon juice for 15 minutes. Season with salt and pepper. Whisk in 1 teaspoon of Dijon mustard and 2 teaspoons of virgin olive oil. (Remember, you’re not eating the whole thing!)
Toss some gorgeous organic baby greens and diced red bell pepper with the dressing and top with seafood. ENJOY!
