A neighbor generously brought all these vegetables over to Tom and I yesterday that he got from the Farmer’s Market in Brentwood! I couldn’t believe all that he brought! So I needed to get busy and start using this fabulous gift and posting some Dukan Diet recipes. Immediately I thought of soup for the kale. It really holds up in soup and goes fabulously with sausage. Can’t wait to see what I come up with for the dandelion greens and all those beautiful root vegetables.
SAUSAGE AND KALE SOUP
2 turkey Italian sausages, casings removed
1/2 onion, chopped
5 carrots, peeled and cut into 1-inch pieces
1 head of kale, cleaned well, ribs removed and chopped
8 cups vegetable broth
1/2 t chili paste
Brown the onion and sausage in a large Dutch oven. Add the rest of the ingredients and bring to a boil. Cover and simmer about 20 minutes or until carrots are almost done. That simple. Great, fresh ingredients don’t need much work.
