Please forgive the picture. I was in the desert last weekend and forgot my camera. But look the beyond the bad photography and even beyond the chicken and look at the pot. It’s my brand new clay pot and it’s the most wonderful thing in the world. I baked two small chickens with carrots and onions in it and they were the most deliciously moist chickens I’ve ever baked. Here is the simple Dukan diet recipe, but please, please consider buying the pot. It’s worth every penny. You don’t have to add fat and the food comes out juicy and delicious. Read about them on Amazon. They are wonderful.

ROAST CHICKEN WITH VEGETABLES
1-2 small chickens, depending on how large your clay pot is
1/2 lemon, quartered
2 large sweet onions, quartered
1 bunch of carrots, greens removed
While preparing your chicken, soak the lid of the pot. I simply fill mine with water in the sink while I do other things. Then place all ingredients in the pot and cover. I placed a bit of onion and the lemon inside the cavity of the chicken, then the rest around it. I also sprinkled the chicken with salt and pepper and a bit of smoked paprika. Place the pot in a cold oven. Turn the oven on to 375 and bake for 90 minutes. Remove lid very carefully as the steam is hot! I sprayed mine with a bit of cooking spray and placed it back in the oven for about 10 minutes so it browned nicely. That’s it!!
