So, as I’ve mentioned recently, I’ve been working healthy carb choices back into my diet. These recipes are for the later phases of the Dukan Diet but I want to teach people that there are great choices out there and you’ll need to work them back in or your body will not be happy. Adding white bread, pasta and rice back into your recipes is NOT the way to go. So, I hope this helps some of you. I have to tell you that this dish was absolutely fabulous. I’m making it again this weekend for my family. Good luck everyone!! This recipe literally has 4 ingredients!! And I’ve listed some of the benefits that quinoa gives our bodies:
1. it is one of the most protein-rich grains we can eat
2. it has nearly twice as much fiber as any other grain
3. it contains high quantities of magnesium, manganese, iron and riboflavin (all needed in our bodies)

QUINOA AND CAULIFLOWER “LASAGNE”
1 cup quinoa, I used red
1 head of cauliflower, florets only
1 1/2 cups marinara sauce (try hard to find ones without added sugar and low fat content)
1/4 cup Parmesan cheese, grated
Cook one cup of quinoa in 2 cups of water, like you would rice, for 15-20 minutes. Cooking time may vary, depending on the type of quinoa that you use. There should be directions on the package. Season with salt and pepper. Steam the cauliflower either on the stovetop or in the microwave for about 5-6 minutes.
Assembly: Put 1/4 cup of the marinara on the bottom of a casserole dish. Top with half the quinoa, then the cauliflower, half of the rest of the marinara and half the cheese. Repeat. Bake at 350 for 30 minutes. Enjoy!!!
