These rate right up in my top 5 favorite meatballs. Not exciting to look at, but fabulous to eat. They don’t need anything but a healthy appetite. I had them for snacks the next day. Oh my.
1/2 lb ground beef
1/2 lb ground turkey
3 green onions, chopped
1/2 small sweet onion, finely chopped
3 T chives, finely chopped
1/2 cup lowfat chive cottage cheese
1/4 cup oat bran
2 T minced onion
1/4 cup Kraft Grated Parmesan Cheese (there’s only 1.5 g of fat/2 teaspoons)
Mix all ingredients well, careful not to handle too much. Form about 20 medium meatballs and bake at 400 for 20 minutes.
