So, a simple concept, yes. But a delicious Dukan Diet recipe just the same. I wanted a cheeseburger the other day but didn’t want to cheat: this is what I came up with. I think I’m going to come up with a casserole version of this. I have another idea…until then:
ONION CHEESEBURGER SALAD
1 lb ground sirloin (try to keep fat below 10%)
1/2 small red onion, chopped
1 egg white
1/4 cup oat bran
salt and pepper
2 slices fat free Cheddar cheese slices
1/2 small red onion, sliced
Mix all ingredients except the cheese and form 4 patties. I grilled mine, about 5 minutes on each side, adding the cheese and then the red onion in the last 3 minutes with the lid closed.
For the salad:
1 head of romaine lettuce, very leafy green ends removed, hard core removed and chopped
2 or 3 dill pickles, no sugar, finely chopped
2 small Roma tomatoes, seeded and chopped
1 small cucumber, peeled and chopped
1/2 cup fat free Cheddar, shredded
I added a small amount of sunflower seeds to Tom’s salad just for texture.
All I did was toss all the salad ingredients together and serve under a hamburger patty. The juice from the pickles, tomatoes and hamburger were plenty of flavor for me to eat the salad and burger together. If you need more, add a few tablespoons of fat free mayonnaise to the salad while you’re tossing it.
