Ok, I’m not gonna lie to you. Was this the lowest in fat I should’ve been eating? Probably not. But could it have been so much worse as I could’ve ordered a pizza and killed my diet with carb? Absolutely. This pizza was amazing. And carb free? Well, I decided to put oat bran in it because I hadn’t had my allotment yesterday. But you do NOT need to add it if you don’t need it for the day. I read a lot of recipes online about these type of pizza recipes and I think it was FABULOUS! And if you’re not new to this website, you know one thing about me: I LOVE PIZZA!!
So, while I knew you could make pizza out of cauliflower as I have posted in the past…I had no idea you could make it from cheese and cream cheese. I do like to cheat and sometimes cook cheese, as I’ll show you in a few days, I never thought to make my cheat snacks into pizza crust until I started doing some reading. For a Dukan Diet recipe, I’d say this is a home run. If you had the craving that I had yesterday you’ll be happy to know you can have pizza too, without carbs. While I wouldn’t want you to eat this every day, I do think it’s a perfect alternative. The crust was awesome!!
THAT’S AMORE: LOW CARB PIZZA
6 oz low or fat free cream cheese, softened
8 oz low fat Mozzarella cheese, shredded
1/4 cup oat bran (totally optional!)
1/2 t dried parsley
1/2 t oregano
1/2 t red pepper flakes
toppings as you desire!!
Mix all ingredients together with a wooden spoon until well incorporated.
The best tool for spreading on parchment paper was this inverted spatula that you use for frosting cakes.
You could get it nicely even with this. And if you don’t go any further, this can be used for lots of other recipes–even in the Attack phase. Bake your pizza crust at 375 for 20 minutes, watching closely after 15.
TIP: see how one is quite a bit darker than the other. That’s because I cooked one on a light-colored cookie sheet and the other on a dark one. Unfortunately, the dark one was done before the other! And, it was the larger of the two.
Anyway, once they have completely cooled, remove them from the parchment and begin to put your toppings on.
Top with a low sugar pizza sauce, (or make your own out of water, tomato paste and seasonings) your toppings and then your cheese.
Bake these on a pizza stone for about 10-15 minutes at 400 or until nice and brown.
