This chicken was phenomenal. All the lemon and garlic and onion. Yum. I really think everyone should try this recipe. If you choose to use chicken breasts, I might pound them to an even thickness and the cooking time may be a few minutes longer on the stove. The cooking time in the oven will probably be the same. LEMON GARLIC CHICKEN THIGHS AND TENDERS
2 boneless, skinless chicken thighs
4 chicken tenders
2 t cornstarch
1 small onion, thinly sliced
8-10 large cloves of garlic, crushed
juice of 1/2 a lemon
1/2 t red pepper flakes
1 cup low sodium chicken broth
Season chicken with salt and pepper and dust with the cornstarch in a plastic bag. In a skillet with a bit of cooking spray, brown both sides of the chicken, about 5 minutes for thighs, 2 minutes for tenders. Remove and set aside.
Saute the onions in the pan for about 5 minutes, add the garlic and red pepper flakes and cook for another minute. Add the lemon juice, broth and place the chicken back in the pan. Bring to a simmer, cover and bake at 350 for 15 minutes. Remove the cover and cook for another 5-10 minutes, until chicken is fully cooked. Serve with lemon slices.
