So sorry I’ve been a bit AWOL. I had some international meetings at my office and had not time to write and/or eat Dukan Diet recipes. Ugh. I have some catch up to do, both on the site and with my diet. So, last night I got back on track. This took a couple of hours to break down the lean beef, but it was well worth the wait. It was tender and delicious. Hope you all have time to try it out!!
GARLIC BEEF AND EGGPLANT
1 lb very lean ground beef, like top sirloin, cubed
1 small onion, sliced
1 eggplant, cubed
1 8 oz can tomato sauce
6 cloves of garlic, chopped
1 chipotle pepper and 2 T adobo sauce (optional)
8 oz water
Saute the onion and beef in a heavy pot until meat has browned. Add the tomato sauce, garlic, chipotle if using, and half the water. Cook, covered, for 2 hours, adding water as necessary. Add the eggplant and continue to cook, covered for another 30 minutes.
