After a week in Vegas I was craving healthy vegetables. And as many as I could get of them. This did the trick for me. A Dukan Diet recipe that was simple to make and absolutely delicious. You can add any of your favorite vegetables to this, or protein, but the eggs were enough protein for me, enough I’ve been eating varities of this dish all week!
4 egg whites
2 egg yolk
1/s of a red onion, chopped
1/2 bell pepper, sliced
handful of mini tomatoes ( love the sugar plum ones from Trader Joes)
8 brussels sprouts (steamed in the microwave then halved)
1/2 t Parmesan cheese, grated
Combine eggs in a small bowl and mix with a fork. In a skillet, brown red onion, brussels sprouts, and bell pepper in a bit of cooking spray for 8 minutes. Pour the eggs into the skillet and the tomatoes. When eggs are cooked through, sprinkle in the Parmesan cheese, cook for a minute and serve hot.
