This was my delicious lunch today. I’m using avocado a lot lately as my healthy fat. Trying to keep my diet animal fat free. I’m eating dairy and a bit of seafood but staying away from any cow or chicken. I’m hoping it will make a difference in my cholesterol and weight. It’s not so Dukan Diet friendly all the time but it’s definitely healthy with super healthy alternatives. The bread I used is completely gluten-free. I found a great one at Trader Joe’s.
2 slices gluten free bread
1/2 avocado, smashed with a fork
2 egg whites, 1 egg yolk, mixed with a fork and fried with a bit of cooking spray in a nonstick pan
a few slices of red onion and tomato
2 T low or fat free cheddar, shredded
1 t chopped jalapeno pepper
salt and pepper
This was the most delicious sandwich I’ve had in a very long time. And the nutrition it packed was huge!
