Through my 3rd day of Attack and I couldn’t feel better. I really don’t even feel like I’ve been on a diet although I do miss my vegetables. Soon enough…I think I’ll do 5 days and start my veggies this weekend.
Until then, I’ll be eating more of this delicious Dukan Diet recipe for lunch today. Glad there were leftovers!! You may also want to try this one…Bacon Cheeseburger Quiche, which I made a couple of years ago. Enjoy!
ONION, CHEESE AND BACON QUICHE
8 eggs, or 2 cups egg white substitute (I used 4 eggs and 4 egg whites)
6 slices turkey bacon, chopped
1 onion, sliced
2 T Parmesan or 1/4 cup low or fat free cheese
Spray a 9-inch pie pan with cooking spray. Whisk the eggs together with a quarter cup of water. Add salt and pepper. Brown the bacon with the onion for 5 minutes.
Pour the eggs into prepared dish, drop the bacon and onion mixture on top of the eggs and press down with the back of a spoon.
Top with cheese. Bake at 350 for about 35 minutes or until done. Cool 5 minutes before slicing or serve at room temperature.
