This meal was super easy to adapt and make a Dukan Diet recipe out of. I first served my plate and then added a few things and served it to Tom. If others are wanting carbs in their diet, or you’re in the later phases of the Dukan, whole wheat couscous is a fabulous ingredient to add to a dish. It’s a whole grain, made from whole wheat flour, and it only takes 5 minutes to prepare. That, and some frozen peas, and Tom had a great meal while I got to stay within my diet restrictions.
CURRY CHICKEN AND BRUSSELS SPROUTS
2 cups of cooked chicken, maybe from a rotisseried store-bought one? or leftovers
2 cups Brussels sprouts, cut into 4ths lengthwise
1 cup lowfat milk
2-3 t your favorite curry powder (you know I love Penzeys.com!)
1 t cornstarch mixed with 2 t milk
Add the chicken and sprouts to a skillet sprayed with a bit of cooking spray. Cook for 5 minutes. Pour the milk and curry powder into the skillet and simmer for 10 minutes. Add the cornstarch mixture and stir until sauce has thickened, about 3-5 minutes.
And PEAS AND WHOLE WHEAT COUSCOUS
Couscous takes 5 minutes to steam in a pan. Just make sure you find whole wheat! I added 3/4 cup frozen peas into the curry after I served mine.
