This was put together in about 10 minutes. And all I had to do was look to see what was in my refrigerator!! Seriously, it is my strength in the kitchen. Look to see what is available and make something of it. I have to admit I’m kind of getting sick of eating chicken. Tonight will be my first night with vegetables and I’m insanely looking forward to it. Even then, I’m trying to make something with very little vegetables, but something that resembles something other than a piece of protein. I can’t wait! Until then, I’m going to enjoy this Dukan Diet recipe for lunch again in a couple of hours!
CREAMY BAKED CHICKEN TENDERS
1 lb chicken tenders
1 cup fat free plain Greek yogurt
1 t dry onion soup mix
1/2 t red pepper flakes
1 t dried parsley
2 T Parmesan cheese, shredded and separated
Mix all ingredients, minus 1 tablespoon of Parmesan, together in a large bowl and cover with plastic wrap. Place in refrigerator for 30 minutes. Place in a small casserole dish, sprinkle with the rest of the Parmesan and bake at 375 for about 35 minutes. Enjoy! It’s that simple!
