Salads have been my main meals of the day of late. And this one is an old post that I looked up and made again this weekend.
Hope everyone had as good a weekend as I did. I was at my place in Palm Springs and it was absolutely gorgeous. Not a lot of time for cooking so I just made an old standard Dukan Diet recipe. Enjoy–food always tastes better when it’s pretty!!
Food always tastes better when it’s visually stunning. Tom said to me, “Did you take a picture of this? It’s beautiful” Little does he know I take pictures of 99% of the food put in front of me. But if I’m going to make something this pretty, there is no way I’m going to miss a photo op! Anyway…it’s tastes as good as it looks. And you can put anything you want on it…I did!
2 cups greens, chopped (the greener the healthier and full of vitamins!)
1/2 cup ham, chopped
2 boiled eggs, separated and chopped
6 cherry tomatoes, quartered
1/4 cup Real Bacon Bits or turkey bacon
1/2 8 oz can artichoke hearts, chopped
1/4 cup fat free cheddar cheese, shredded
drizzle of good balsamic vinegar or a squeeze of a lemon
Whatever you choose to put on your salad, just make it pretty! Turkey is a good option, rotisseried chicken, any fat free cheeses you can find.
