So, I really wanted to make pasta for dinner last night. I knew it wouldn’t do me any good so I stuck to my will and tried to make a Dukan-friendly “pasta” dish. I got the idea sitting in my office yesterday. I thought, well, cauliflower made great pizza crust and tater tots, why not try making the tater tots dough, and boiling them instead of baking them! Then just cover them with your favorite pasta sauce (of course with no added sugar or fat–you’re better off making your own) and voila! Well, the boiling didn’t actually work. Thank goodness that I only tried a few of them! I still had the lot of them left to bake and it all turned out awesome. I’m not sure that it tasted like pasta OR gnocchi but I loved it just the same. My girlfriend thought it was great too and she’s not following the diet. A delicious Dukan diet recipe that covers another one of those tricky temptations.
2 12 oz bags of cauliflower florets
2 T nutritional yeast
4 T oat bran
1/2 t coarse kosher salt
4 T grated Parmesan cheese
1 egg, whisked with a fork
Microwave each bag of cauliflower for 4 minutes each or until well done. Pour all the florets into a large bowl and smash with a fork or the back of a spoon. Let stand until cool. Process well in a food processor and squeeze dry in cheese cloth getting out as much moisture as you can. Put cauliflower back into the bowl and add the rest of the ingredients. Form cauliflower dough into 1” gnocchi shapes and press each one with the back of a fork. Bake at 400 for 15 minutes, flipping them every 5. Serve with your favorite sauce.

ROASTED BELL PEPPER SAUCE
1 red, yellow or orange belle pepper, sliced
1 cup onion, chopped
4 garlic cloves, thinly sliced
2 T tomato paste
1/2 cup dry red wine or 2 T balsamic vinegar
1 T sweetener
1 T chopped fresh or 2 t dried basil
1/4 t dried oregano
2 T chopped fresh or 1 T dried parsley
2 15 oz cans diced tomatoes or 1 32 oz can of plum tomatoes, chopped
1/2 t red pepper flakes
Add bell pepper and cooking spray to a saucepan over medium-high heat. Add onion and garlic and sauté 8 minutes. Add tomato paste and cook for one minute. Stir the rest of the ingredients and bring to a boil. Reduce heat to medium, and cook, uncovered for about 15-20 minutes.
