Ok, so this was Tom’s plate but I just wanted everyone to see how pretty they were. I skipped the avocado mixture I made and the meat was so delicious I didn’t miss it! There was so much ripe citrus in the dessert this weekend I had to do something with it all. So, drinks for everyone, and delicious marinated carne asada for me!
This Dukan Diet recipe disappointed no one. I’ll include the recipe for the guacamole just in case you want to make it for everyone else.
CARNE ASADA LETTUCE WRAPS
3 lbs flank steak
juice of one lemon
juice of two limes
juice of half an orange
half a red onion, sliced
half a bunch of cilantro, ripped in thirds
2 T olive oil (I used a flavored chili oil)
Pour all the ingredients into a large resealable bag along with the meat. Season with a bit of salt and pepper. I marinated mine in the fridge for about 5 hours and then removed the meat from the fridge for about 30 minutes before I threw it on the grill. It was perfect! It only took about 5 minutes on the first side and another 3 on the second.
The important thing to remember is to let it set about 10 minutes before you cut it and cut it against the grain with your knife on a slant. I ate mine just like above but it was also delicious on the inside leaves of some romaine lettuce and some avocado dip.
3 avocados, each half squeezed into a bowl
2 T very thinly sliced red onion
1/2 small jalapeno, finely chopped
10 grape tomatoes, halved
a handful of cilantro
a squeeze of lemon
salt and pepper
Just roughly mix all these ingredients together in a bowl and serve immediately.
