I still get my delivery from Farm Fresh To You and you never know what they’re going to bring! This week they brought beautiful artichokes and avocados. Tom got the pleasure of eating the super creamy avocados yesterday but I was all over the artichokes last night. Thinking, how can I make a Dukan Diet recipe out of them, I came up with an oil-free caesar-type dressing for them that was absolutely delicious. A fresh lemon, some garlic and Dijon and you have a very tasty, a bit garlicky, dressing for these wonderful little vegetables. If you need some direction on how to prepare a steamed artichoke, you can go to my previous post Steamed Baby Artichokes. The only difference in these small ones is that you’ll need to remove some of the inside tough “choke” (the fuzzy part in the middle above the delicious heart). Here is also a great article on how to prepare and eat an artichoke. Steam them for about 30-45 minutes, depending on how large yours are. Mine were very small so I only needed about 25 minutes. Enjoy!! And don’t be scared to make these if you never have. They are worth the effort!
2-4 artichokes, trimmed and steamed
juice of half a lemon
1 large garlic clove, chopped
1/2 t Dijon mustard
1/2 t red wine vinegar
coursely ground pepper
Steam your artichokes. While they are in the steamer, combine all the other ingredients in a small bowl. Once you’ve trimmed the inside of the choke, drizzle dressing over them and serve warm.
