Sometimes it’s nice to enjoy a beautiful, green vegetable. And I had to share this recipe since it was so simple and so delicious and could pair with any of your favorite protein Dukan Diet recipes. These greens were delivered to me with all those beautiful vegetables we got from a friend last week. I highly recommend dandelion greens. First, they are simple to prepare and second, they don’t have that weird film that sits on your teeth like spinach leaves. Check them out, they’re super trendy and your family can think you made something outrageous!
SAUTEED DANDELION GREENS
Get yourself a nice bunch of dandelion greens.
Trim them, removing the lower third of the stalks and then cut them in thirds.
Boil them in salted water for about 10 minutes, or until tender.
Remove them from the water and drain VERY WELL, pressing the water through the colander.
In a saute pan, add a bit of cooking spray, 2-3 chopped cloves of garlic and a pinch of red pepper flakes. After a minute, add the greens and a bit of salt. Saute about 4-5 minutes.
Squeeze a quarter of a lemon over the greens and serve immediately.
