Consolidation Oat Bran Bread
Today I made a proper loaf of bread. And it had whole wheat flour in it. Sorry all of those of you who are still in Cruise but I had to do it. Not just for me but for all the followers that have moved on to Consolidation with me. It also has oat bran and wheat bran in it. And it was my first, and I’m not kidding, proper piece of bread since March when I started the Dukan Diet.

Whole Wheat Oat Bran Bread
I haven’t had bread outside the Dukan loaves I’ve been making and I have to say that I don’t like them much. Too much yeast, first of all. Anyway, this isn’t perfect yet either but I will keep trying and this is a definite improvement! I say try this out for sure if you’re in the mood. I pretty much ate a piece as I was lifting it out of the oven. Enjoy!
WHOLE WHEAT OAT BRAN BREAD
1 1/4 cups warm water
1 1/2 T instant powdered skim milk
2 T honey
3 T lowfat buttermilk
1 1/2 t salt
2 1/2 cups whole wheat flour
1/4 cup oat bran
1/4 cup wheat bran
2 1/2 t active dry yeast
Mix the water, yeast and honey and let sit while gathering the rest of the ingredients. Mix all the dry ingredients in with the yeast, form a ball and place in a bowl sprayed with cooking spray. Cover with a damp cloth and place in a warm spot for 1 to 2 hours. I cut my dough in half and kneaded for a few minutes. Then I formed a long french loaf and the one pictured. Bake at 375 for about 20 minutes. The internal temperature was about 200 degrees.
Diana from FB gave me this recipe and I have adapted it a bit. And while the loaf really turned out pretty, it still isn’t what I’m looking for in bread. It sounds like wheat bran is ok on Dukan attack and cruise but not wheat germ so I’m going to be spending a LOT of time this weekend working on this bread. WE ALL DESERVE A GOOD SLICE OF TOAST! So I’m pretty determined to get one! Stay tuned as this post will be a work-in-progress!
BRAN BREAD
8 T oat bran
8 T wheat bran
4 T wheat germ
10 T fat free milk powder
1 t baking powder
1 t salt
2 packages quick-acting yeast
1 T fat free plain yogurt
4 T fat free or light cream cheese
3 eggs
4 T warm water
In the first bowl whisk the yeast, water, yogurt and cream cheese. Mix all the other ingredients together in a larger bowl. Add the yeast mixture to the other ingredients and whisk well. Add eggs, one at a time, until well mixed. Cover bowl with a wet towel and let rise for 1 hour. Pour mixture in to a loaf pan coated with olive oil spray and bake for 10 minutes at 400. Reduce oven to 350 and cook for another 20 minutes.
