CUCUMBER SALAD RECIPE
1/2 large English cucumber, peeled, thinly sliced and quartered
1/2 cup nonfat sour cream
2 T chopped fresh herbs (lemon thyme, basil, parsley, mint, or chives)
1 t finely chopped and seeded jalapeno (optional)
season with salt and pepper
Mix all ingredients and refrigerate for at least a half an hour. Serve ice cold.
