CROCKPOT CHICKEN CORDON BLEU
4 thin-sliced boneless skinless chicken fillets, or pound your own
4 slices low sodium ham
4 slices low fat Swiss cheese
8 oz sliced mushrooms
3/4 cup low sodium chicken broth
1/4 cup dry white wine
1 t dried thyme
2 T dried parsley
2 T Parmesan cheese, grated
1 t cornstarch mixed with 1 T water
Layer a piece of ham and cheese on top of the chicken and seal the opening with a toothpick. Place mushrooms on the bottom of the crockpot and the chicken breasts on top. Whisk together the broth, wine, thyme, parsley, season with salt and pepper and add to the crockpot. Top with the Parmesan cheese. Cook for 6 hours on low or 4 on high. Once the chicken is done, remove it and keep it warm on a plate covered with foil. Turn the crockpot to high, add the mixture and cook for a few minutes to thicken the sauce. Serve chicken with sauce over it.
