CREAMY CHICKEN AND BROCCOLI CURRY RECIPE
1 1/2 lbs chicken tenders
1 onion, chopped
1 1/2 t curry powder, any that you like
1 1/2 cups chicken broth
1 1/2 cups broccoli, steamed
1/2 cup fat-free sour cream
1 t cornstarch, mixed in 1/4 cup water
olive oil spray
salt and pepper
Season tenders with salt and pepper, a bit of olive oil spray and brown in a skillet for 3 minutes per side. Transfer chicken to a plate. Add onion to the skillet and a bit of olive oil spray and cook for five minutes. Add broth, cornstarch slurry, curry powder and season with salt and pepper. Cook for another 5-6 minutes or until the sauce has thickened a bit. Return the chicken to the skillet, add the broccoli and heat for 2-3 minutes. Remove from heat and stir in the sour cream.
