Christina Lumbroso’s Maakoude
Christina’s father in law came from Paris, France and taught her a wonderful family recipe that is DuKan perfect! It is called “Maakoude” – a Tunisian dish.

CHRISTINA’S MAAKOUDE
Take a bundt pan and spray with oil so it won’t stick. Beat 12 eggs and add salt and pepper. Brown 1 lb of ground beef well with a bit of onion and garlic. Chop up a bunch of italian parsley. Add beef and parsley to the eggs and mix in 2 tablespoons of oat bran. Cut two hard boiled eggs into quarters and lay the quarters in the bundt pan. Then cover with the egg and meat mixture. Bake at 350 degrees until solid (about 30 minutes) Turn over onto a serving dish and serve in slices. You can eat it hot or cold with a squeeze of lemon! Delicious. Can be made with chicken or other lean meats. Add a touch of chopped green pepper or mushrooms on veggie days! Delicious, nutritious and all protein!
