Chipotle Turkey Lettuce Tacos
I’ve missed Mexican food on this diet so I jumped at the chance to come up with something on my PV day that would work. Seasoning the meat was easy because I love spicy food and Dukan says yes to most seasonings on a daily basis. The lettuce was the only reason I couldn’t eat this on PP day and I’m not going to have any problem eating the leftovers tonight without it. Chipotle peppers are easy to find in most larger grocery stores now in the International food section. If you don’t like as much spice as I do, you can freeze the leftovers in the adobo sauce and use next time. Also, if you don’t care for as much spice, just add the sauce from the can. It adds a very smoky flavor without a ton of heat.
CHIPOTLE TURKEY LETTUCE TACOS RECIPE
1 1/4 lbs ground turkey
4-8 canned chipotle peppers in adobo sauce, chopped
4-8 T adobe sauce
1/2 cup tomato sauce
1 t garlic powder
1 t salt
8 iceberg lettuce leaves
nonfat sour cream
finely chopped jalapeños
smoked cheddar, shredded
chopped cilantro
hot sauce
Brown turkey in a skillet over medium heat. Add the chipotles, adobo sauce, garlic powder and salt and heat for 10 minutes. Serve two tablespoons to the center of a lettuce cup and garnish with sour cream, cheese, cilantro, jalapeños and hot sauce. Don’t forget that when you use a microplane (Tip #2 ) to shred the cheese, and you use a very flavorful smoked cheese, the amount of cheese you use can be very minimal. You really can get by with a half of a teaspoon.
