Chimichurri Flank Steak with Spicy Noodles
Usually Chimichurri sauce is two-thirds oil. So when i decided to make this recipe Dukan -friendly, I just omitted it. And I didn’t even miss it. This sauce is so incredibly flavorful and the steak cooks so fast that no oil is even necessary. Try serving it with these noodles and make as spicy as you like.
CHIMICHURRI FLANK STEAK RECIPE
3/4 lb flank steak
1 bunch of cilantro
3 cloves of garlic, chopped
3 T lemon juice
1/4 cup red wine vinegar
1 t salt
1/4 t pepper
1/4 t cayenne pepper
1 t paprika
Put all ingredients in a food processor and blend until combined. Save a few tablespoons of the sauce to serve with the steak and pour the rest into a ziploc with the steak. Refrigerate for an hour. Grill or cook in a grill pan for 5 minutes on the first side, flip, and cook another 2 or 3 minutes. Serve with the extra sauce, warm, over the cold noodles.
SPICY NOODLES RECIPE
1 package of Miracle Noodles (See more on Tips page)
1/2 bunch of cilantro, chopped
1/4 cup rice wine vinegar
2 cloves of garlic, chopped
1/2 t chili paste
8 pea pods, chopped in 1/2 inch pieces
1/4 cup water chestnuts, roughly chopped
Mix all ingredients well and refrigerate for at least an hour.
Serves 2
