Chili-Lime Chicken Thighs
Obviously you can use any chicken pieces you want for this recipe. I just love the thighs. And when I say that I could’ve drank the sauce on this chicken, I’m not kidding. I ate the chicken last night in a bowl so I could pour a couple of tablespoons of the sauce all over it. This is a great dish to do on the grill too. Just continually baste the chicken with the sauce so it carmelizes a bit. Happy weekend!
CHILI-LIME CHICKEN THIGHS
2 1/2 lbs skinless chicken thighs
2/3 cup sugar free maple syrup
2/3 cup tomato sauce
1 T cider vinegar
1/2 t onion powder
1/2 t garlic powder
1 T brown sugar blend Splenda or 1 t Splenda
1/2 serrano chili, chopped
2 T Dijon
the juice and zest of one lime
salt and pepper
Mix all the sauce ingredients in a bowl. I poured half the sauce on the chicken and put it in the oven. Then I continued to baste every 10 minutes or so. Bake at 400 for 30-40 minutes. Then turn up to 450 and bake for an additional 10 minutes so the sauce starts to really bubble and thicken and the chicken carmelizes a bit.

i’m so glad. i try to keep them simple and quick. i get home and have dinner on the table usually within the hour. that includes pictures and the recipe written up. i know there isn’t anything in there that anyone can’t do!! keep trying them! you’ll start writing your own soon!
