Back to a Pure Protein day. Hope this helps, it is my favorite chicken recipe so far. It’s amazingly flavorful. Tom was amazed last night with a bit of broccoli on the side.
CHICKEN WITH LEMON THYME MUSTARD YOGURT SAUCE RECIPE
1 lb chicken tenders
1/4 cup chicken broth
1/2 cup plain fat free greek yogurt
2 t Dijon
1 T fresh lemon thyme, chopped
salt and pepper
olive oil spray
Season chicken with salt and pepper, spray with cooking spray, and saute them in a skillet for 2-3 minutes per side, until done. Remove from skillet and keep warm on a foil-covered plate. Add broth to the pan and cook for 1 minute. Remove from heat, add yogurt, mustard and thyme and serve chicken with the sauce.
