Chicken Tikka Masala
Another really easy, flavorful chicken recipe. I like cooking with chicken tenders because you can pound them a little bit and they are so incredibly moist. If you can’t find tenders just buy the breasts and pound the chicken and cut into strips. Hope you have a great Sunday!
CHICKEN TIKKA MASALA RECIPE
1 cup fat free greek yogurt
1 T lemon juice
1 t cumin
1 t cinnamon
1 t cayenne pepper
1 t ancho chili powder
1 T ginger, minced
salt and pepper
1 clove garlic, minced
1 jalapeno, seeded and finely chopped
1/2 t cumin
2 t paprika (I used smoked)
1 8 oz can tomato sauce
1 cup fat free plain greek yogurt
1 1/2 lbs. chicken tenders or chicken breasts
cilantro, chopped for garnish
Combine the first 7 ingredients. Season chicken with salt and pepper, pour yogurt mixture over it, cover, and refrigerate for 1 hour. Cook tenders over medium heat in a grill pan coated with a bit of olive spray for 3 minutes per side, or until done. Saute garlic and jalapeno in a bit of olive oil spray in a skillet and add cumin, paprika, and a teaspoon of salt. Stir in tomato sauce and cook for 5 minutes. Add yogurt and grilled chicken, just to reheat the sauce and the chicken, about 5 minutes. Garnish with cilantro.

I made this last night. Followed the recipe to a T, but, I’m sorry, it was disgusting! It was no more like tikka masala, than an apple is like an orange. I’ve now tried 2 chicken recipes from here, and both have been disappointments.

Made this tonight and unlike previous poster, I thought it was really tasty! A little too spicey for my taste, but I now know to tone it down next time. Keep up the awesome work Janice.
