Chicken Thighs with Barbecue Dipping Sauce
With (PV), or without (PP) the sauce, this chicken is absolutely delicious!! I started this chicken in a grill pan and finished it in the oven. I’m not kidding you…Tom asked me “Are you going to eat the skin?” I had to tell him it didn’t have any on it!!
CHICKEN THIGHS WITH BARBECUE DIPPING SAUCE
6 chicken thighs, skin removed
1 T smoked Spanish paprika
2 t lemon pepper
1/2 t garlic powder
1 T zero calorie brown sugar
SAUCE:
4 oz tomato sauce
2 T lemon juice
2 T lime juice
2 T cider vinegar
2 cloves garlic, finely minced
2 T zero calorie brown sugar
1 t Dijon mustard
1/2 t red pepper flakes
Mix chicken rub ingredients together in a small bowl. Season chicken with salt and pepper and press rub all over the pieces. Set in refrigerator for 15 minutes. Prepare grill or grill pan. Cook chicken about 10 minutes per side, finishing in the oven at 375 for 25 more minutes. Meanwhile, prepare your dipping sauce by adding all the ingredients to a small saucepan and simmering for 15 minutes covered, and 10 uncovered. Serve with chicken.

Thank you! Is it okay to use brown sugar splenda instead if you are on the cruise phase? I’m sure I can find the Kroger brand online, but all we have here is Splenda.

no, actually the brown sugar blend splenda is half real sugar!! that’s why it tastes so good. when i was “cruising” i used it because i just couldn’t stand the chemical taste of splenda, but i wasn’t really supposed to…
