So, this dish would be fabulous over pasta, and for those of you who are cooking for others, I would definitely serve this over some whole grain pasta–Tom said it was the best dish I’ve ever made (he always says that). Obviously, the olives are only for Consolidation and beyond but I wanted to put them in there to show you how you can start adding back some really tasty and healthy ingredients once you get to Consolidation, yet still keep these dishes low fat and healthy. I think drained, marinated artichoke hearts would be a welcome addition, as well.
CHICKEN, SAUSAGE, PEPPERS AND ONIONS
1 chicken breast, pounded to 1/2-inch thick
2 turkey Italian sausages, casings removed
1/2 small onion, sliced
1/2 red bell pepper, sliced
1/4 cup kalamata olives (Consolidation)
1/2 cup Italian diced tomatoes
In a skillet, brown the chicken about 5 minutes per side, or until done. Remove from skillet and slice into 1/2-inch strips. In a bit of cooking spray, cook the sausage, onion and bell pepper until soft, about 6 minutes. Add the olives, tomatoes and chicken and cook another 5 minutes, or until warm. Season with salt, pepper and red pepper flakes.
