Tom and I celebrated our 8th anniversary last night so what better way to celebrate than with a Dukan Dinner? He has missed the old salad days and
Caesar is one of his favorites so he got the Dukan version of this classic salad. And although you can tell the difference, he said the differences were all good!
CHICKEN CAESAR SALAD
2 T freshly grated parmesan cheese
1/3 cup fat free greek yogurt (very tangy which is what I used) or fat free sour cream
2 T fresh lemon juice
1 t red wine vinegar
1 t Dijon mustard
1 t anchovy paste or 2 anchovies, finely chopped
1 t Worcestershire sauce
2 garlic cloves, crushed
1 large head of romaine lettuce, torn into bite-sized pieces
4 chicken tenders, grilled with lemon pepper
For my chicken, I just seasoned it with lemon pepper and salt and threw it into my grill pan. It was simple and juicy and perfect on top of the salad.
Whisk together all ingredients down to the lettuce. Season with salt and lots of pepper. Pour dressing over the lettuce and chicken and chow!
