Chicken Cacciatore
Tonight we’re having a bit of comfort food. This chicken was so tender and flavorful. You can just eat the chicken if it is a Protein day but I’d wait and have all of it together on a Protein Vegetable day.
CHICKEN CACCIATORE
1 package chicken pieces, skin and fat removed
2 T corn starch (optional, and I didn’t use)
1 cup sliced mushrooms
1 red pepper, seeded and chopped
1 onion, chopped
1 carrot, peeled and chopped (optional)
1 28 oz can diced tomatoes, drained
1/2 cup red wine
2 t dried basil
2 T dried parsley
1 t dried oregano
salt and pepper
red pepper flakes (optional)
Sprinkle chicken with corn starch and spray with olive oil spray. Cook chicken for 5 minutes each side until brown in a dutch oven. Remove chicken and saute the mushrooms for 5 minutes. Place chicken, pepper, onion, carrot, tomatoes, wine and seasonings back in with the mushrooms. Place in oven and cook, covered, for 2 hours at 325.

Just made this for my dad’s birthday party. It’s a potluck, and I had to make sure there was something there that was Dukan-approved. I made a bit extra and added zucchini because we had some in the garden. Can’t wait to try it!
