I got some locally grown radicchio in my farmfreshtoyou.com box this week. This salad was wonderful because I used a mixture of sweet balsamic, spicy radicchio and warm boiled eggs and chicken. If I had some artichoke hearts this salad would’ve been perfect! It was a bit of a twist on a warm spinach salad. Tom ate more than his share of it!! He doesn’t even know that we’re still eating Dukan Diet food anymore.
CHICKEN AND RADICCHIO SALAD
1 head of radicchio, chopped
2 eggs, boiled and chopped
4 oz of chicken breast
1/4 cup Real Bacon Bits
1/2 cup fat free cheddar cheese, shredded
1 yellow bell pepper, seeded and chopped
good balsamic vinegar
I cooked the eggs and chicken at the same time so they would be warm when I tossed the salad together. I just topped the salad with some quality balsamic vinegar and that’s all it needed.
