Chicken and Broccoli
I couldn’t get enough of this dish. I had to immediately wrap up some of it for lunch or I would’ve eaten the entire thing! Obviously, you can make it with boneless chicken breast, I’m just a big fan of the thighs. If you’re going to use the breast, pound it a bit so it’s all the same thickness when you’re cooking it so you don’t overcook parts of it. Enjoy!!
CHICKEN AND BROCCOLI
4 chicken thighs
2 cups broccoli
2 cloves garlic, minced
3/4 cup beef broth
1 T oyster sauce
1 t low sodium soy sauce
1/2 t Splenda
1/2 t red pepper flakes
1 T cornstarch mixed with 1 T water
Brown the chicken thighs in a bit of cooking spray in a skillet. About 5 minutes per side. Remove and set aside. Add the broccoli to the skillet and cook for 3 minutes, adding the garlic in the last minute. Add the beef broth, oyster and soy sauces, Splenda and the red pepper flakes. Add the chicken back to the pan and mix in the cornstarch mixture. Cook for another 10-15 minutes, until the chicken is fully cooked and the sauce has thickened.






I remembered to buy the thighs but forgot the broccoli…Darn and it looks so delish…Next week maybe…Oh and thanks for giving me so many wonderful ideas.. I absolutely love to cook so this diet has actually been a breeze. Takes quite a bit of prep for the whole week but that is what Sundays are for.

Think I am going to try this with tenders! I’m not really a thigh girl. But it looks amazingly good.

Do you have a way to make this in the crock pot? Is there something that you can add instead of oyster sauce?
sure. just cook the whole thing on low. you can just use a bit more soy. you don’t have to use the oyster sauce!!
