This is a simple appetizer to serve and Dukan-friendly. You can grill your zucchini a day or two earlier and then just roll them up just before you serve them.
CHEESE STUFFED ZUCCHINI ROLLUPS
3-4 large zucchini, cut into 1/4-inch lenghwise slices
light spreadable cheese (I used Alouette)
baby spinach leaves, basil or any other fresh herb
salt and pepper
olive oil spray
Spray zucchini with olive oil, season with salt and pepper and grill them until they are tender. At one end of the zucchini put a half to full teaspoon of cheese mixture and your fresh herbs. Roll up and serve seam side down. These can be refrigerated a day ahead and brought to room temperature to serve.
