Cemitas and Chipotle Tomato Sauce
A cemita (a traditional sandwich from Puebla, Mexico) is something I just learned of. And boy did it sound delicious! So delicious that I decided I had to have one. And since I’m writing this for most people that are in the Cruise Phase I figured I would not put it on whole wheat bread but wrap it in a Oat Bran Wrap. I also decided I would write it with a few choices, depending on what phase you were in.
Traditionally, cemitas use carnitas, a wonder fatty pork cooked all day slowly and then broiled to get the edges nice and crispy. That is obviously fine for anyone in Stabilization but no one I know is in that stage yet.
So, for Cruise or Consolidation (or Cons cheat days) the traditional meat will be lean center cut pork, cooked all day to soften and shred or simply shredded chicken. The sandwich is piled high with meat, avocado, mexican queso blanco, sliced onion, and this wonderfully tasty spicy chipotle tomato sauce (you’ll want to start eating this on your eggs and everything else you can think of once you taste it). With a few Dukan-friendly changes, this sandwich is definitely a winner! Or just pile it all into a bowl and dig in.
CEMITAS
pulled chicken or pork (both could be cooked in a slow cooker all day with a can of mexican diced tomatoes or chicken broth and spices)
avocados, sliced (Stabilization or Consolidation cheat meal)
fat free mozzarella cheese or traditional queso blanco
onion, sliced
This sandwich is easy to assemble. In the center of your oat bran wrap lay the meat, a few slices of avocado, cheese, onion and top with the tasty sauce recipe below.
CHIPOTLE TOMATO SAUCE
1 28 loz can whole peeled tomatoes
2 canned chipotle chilis in adobo sauce
1 T adobo sauce from the chilis
3 cloves of garlic, roughly chopped
1/2 small red onion
1 lime, zest and juice
salt and pepper
Combine all ingredients in a food processor and pulse til smooth. Serve on sandwich.
