Celebration Lemon Blueberry Bread
I have noticed that a lot more people are moving into the Consolidation Phase so I decided to start occasionally post recipes from my other collection. Some of these, one day, I hope to put in a cookbook. Anyway, these mini loaves are awesome thank you and hostess gifts. This one is just perfect because blueberries are in season!!
LEMON BLUEBERRY BREAD
1 1/2 cups flour
1/2 cup milk
1 T lemon peel
1/2 t salt
1 t baking powder
1 cup sugar
2 eggs, beaten
3 T lemon juice
1/3 cup butter, melted
1 cup fresh blueberries
Mix all wet ingredients thoroughly. Mix all dry ingredients together in another bowl. Stir wet into dry and fold in blueberries. Spray 2 mini loaf pans with cooking spray and bake an hour at 350. Let cool for 10 minutes and remove from pans. Cool completely on wire racks.
Optional glaze:
2 T lemon juice
1/4 cup powdered sugar
Poke holes in the top of the loaves with a toothpick and drizzle over warm bread after removing from the pans.

Oh my, those look so good. I’m in consolidation but have still been trying to stay away from desserts during my celbration meal. However, I may have to make an exception for these. Did you just use regular flour?
i did use white flour. i actually made these a long time ago and I’ve been experimenting with whole wheat. wait until later today, i’m posting lemon blueberry oat bran flatbread and it turned out really good last night. then you don’t have to cheat so much!

Hi Janice, what is the size of the mini loaves. I might use a dish that is round instead if it is close in size. Thanks.
they’re like 3 by 5 or 6 or so. but you can make this in any form that you wish. just adjust the baking time if the dish is larger!
