It’s getting to be one-pot dish season again. My favorite. And I’ve been really trying to find proteins and vegetables that I haven’t put together before. These two, are a first for me, and I just loved the combination. With only 5 ingredients, this should prove to anyone that they can make a healthy, tasty meal, quite quickly! Of course, you can substitute any vegetable or protein in this dish to make it your own! Try this version, or come up with your own favorite! Enjoy.
BUTTERNUT SQUASH AND ITALIAN TURKEY SAUSAGE
1 lb turkey Italian sausage
1 butternut squash, peeled, seeded and cut into cubes
1/2 small onion, finely diced
1/2 red bell pepper, finely diced
2 cups low sodium chicken broth
In a Dutch oven cook the sausage. Remove and cut slice on the bias. Saute the onions and bell pepper for five minutes, add back the sausage, add squash and pour in the chicken broth. Cook for 30-40 minutes or until the squash is cooked. Season with pepper, pepper flakes or hot sauce.
