These were super easy to make and really delicious. I served them with a Caesar Salad that I had posted a while ago. After a wonderful sail today, I came home and made these for Tom and our friend, Captain Chris! Thanks for the great day, Chris!!
BUTTERFLIED CORNISH GAME HENS
2 Cornish game hens, butterflied
salt and pepper
Preheat oven to 400. With the breast side down, cut the entire back bone out of the chicken. Flip the chicken over and press hard to break the breast bone so it lays flat on the board. With skin side down, place chickens in a large skillet over high heat on the stovetop, seasoning with salt, pepper and garlic powder. Place a piece of foil loosely over the chickens and put a cast iron skillet on top of the foil, pressing down. Cook for 5 minutes. Then put all of it in the oven and cook for 15-20 minutes, or until 175 degrees. Let them set for at least 5 minutes before serving.
