OK, so not for all Dukaners but this recipe can be adapted so that when you do start eating fruit again, this doesn’t have to be that bad for you!! And the summer months are just begging for this recipe to be made. If not for you, but think of your families!!
BLUEBERRY AND CHERRY CRISPS
3 cups each, blueberries and cherries, cherries pitted and halved
2 T cornstarch, separated
1 T sugar or sweetener
1 T brown sugar or brown sugar substitute
1 T lemon juice
3/4 cup oats, separated in half
1/2 cup brown sugar or brown sugar substitute
1/2 cup whole wheat flour
4 T butter, cold and cut into small pieces
1/4 t cinnamon
In one bowl mix cherries with half the cornstarch and white sugar and in another mix the blueberries, brown sugar and lemon juice. Set aside.
In another bowl mix the topping ingredients with your hands until it is crumbly and the butter has mixed in with the rest of the ingredients. You still should have small chunks of butter left in the mix.
In two small casserole dishes pour the fruit and top with half the topping. Bake at 374 for 40 minutes, or until bubbly and nice and brown on top. Serve warm. (And maybe with a tiny bit of fat free vanilla frozen yogurt!!)
