Blackened Flank Steak
Sorry, I’ve been MIA lately. Work has some serious problems and I was lacking some serious sleep for about a week. But I’m back on track today and feeling much better. I hope you all have a great July 4th. This is a simple rub that you can throw on any steak, fish or chicken. Super easy for a July 4th barbecue!!
BLACKENED FLANK STEAK
1 T smoked paprika
2 t fresh thyme, minced
2 t onion powder
2 t garlic powder
1 T zero calorie brown sugar
2 t kosher salt
1 1/2 t black pepper
1 t cayenne pepper
1 t dried oregano
1/4 t nutmeg
1/2 t ground cumin
1 1/2 lbs flank steak, cut in half
Rub the seasoning mixture all over the meat and let set at room temperature for 20 minutes. Heat a cast iron skillet (you could grill this too!) over medium-high heat and throw in pan that was coated with a bit of cooking spray. Cook to desired doneness, I did mine for about 5 minutes a side for medium. Let set for 5 minutes and slice thinly across the grain.
