Beef Meatloaf with Mushroom Gravy

I know I say it a lot but I really think this may have been my favorite meal since I started the diet.  It’s funny because I don’t HAVE to eat like this every day but now I want to.  It’s amazing how good I feel when i stick with PV or PP days.  I don’t have cravings for bread or sugar and I have amazing weigh-ins in the morning!!  Anyway, the flavors are awesome together.  The recipe is simple.  And the simple additions like fresh thyme and parsley from my garden changed the whole complexity to the dish.  Try this one!!

BEEF MEATLOAF WITH MUSHROOM GRAVY

1 lb ground sirloin
1/4 cup egg white substitute
4 T oat bran
2 T tomato paste
4 T chopped sun-dried tomato
2 T finely chopped onion
2 T freshly chopped parsley
salt and pepper
olive oil spray

1 8 oz package mushrooms, sliced
1 cup low sodium beef broth
1/4 t Dijon mustard
1 t fresh thyme
1 T corn starch
salt and pepper

Mix all the meatloaf ingredients by hand, season with salt and pepper, spray two mini loaf pans with olive oil spray and place the meat in the two of them.  Bake at 375 for 40-45 minutes.  Meanwhile, saute the mushrooms in a bit of olive oil spray.  Add the beef broth, dijon, thyme, and cornstarch in a separate bowl and whisk until smooth.  Add to skillet and cook until thick.  About 5 minutes.  Season with salt and pepper.

Serve gravy over slices of meatloaf once the loaves have had 10 minutes to set up.  I served mine with a bit of sauteed red chard with some crushed garlic and salt and pepper.

    that is hilarious!! yes, meatloaf is that easy and yes, i LOVE Family Guy!! the peas always kill me! don’t you call it mince bread? i did the UK diet and noticed it on the site! anyway, thanks for the laugh!! and try the meatloaf–it’s awesome!

    that’s hilarious! i should! but i actually go to the market, almost nightly, and look for what’s on sale and that’s what gets made that night! it looks like i make a lot but on the meatloaf recipe, i actually only baked one small mini loaf pan. i always wondered if it looked like i was only making a little! i’m obviously doing a good job of hiding the fact that i actually only make about half or a quarter of what the recipe makes! tonight, i’m probably going to make the rest of that pound of ground sirloin i bought last night in spaghetti and meatballs or something else i can think of!
