Only add the barley if you’re in Stabilization or having a cheat meal in Consolidation. But either way, this soup is really tasty. Very earthy and satisfying. And the barley is a great whole grain to add in to your diet when you have moved on the later phases of the diet.
BEEF AND MUSHROOM SOUP (Barley too if you’re in Stabilization!)
8 beef bones (usually your butcher has some nice ones!)
4 cups beef broth
4 cups of water
1 lb stew meat or any very lean beef, cut into cubes
2 8 oz packages of mushrooms, quartered
1 cup quick cooking barley (Stabilization)
Add the bones to the broth and water, along with the meat and bring to a boil. Turn down and simmer for about 2 hours, covered. Add the mushrooms and barley and cook for another 20 minutes.
